I've done the tried and true and original EVOO, (Garlic) Salt + Pepper, Lime and Oregano.

What other marinades should I do? I have lots of Mango Chutney around too.

Grind 1/2 onion, then 2 teaspoons of garlic and mix it

Then mix a bit of cumin, two teaspoons of grinded pepper, 1 spoon of salt and one spoon of paprika, mix it with the onion and garlic. Maybe a little bit of oregano too

Put two spoons of lemon juice in the mix, then 1/4 cup of vinegar and 1 cup of wine. mix it all.

You can marinate the chicken in this mix and then cook in in the oven for 1.5 hours. This is one of my favorite chicken recipes, Im sure you'll like it

This is for two chicken breasts though. My planned method of cooking is gonna be pan frying in EVOO on low heat. I might slice them into strips though b/c takes a long time to cook.

Hmm, soy/sesame oil/ginger/a cut chilli/a crushed ginger clove or two/fish sauce...can't help you on quantities right now though.

Yep. And I haven't even gotten onto belachan yet...

Preparation techniques can vary greatly; however, the following procedure is most common in China, and much of Southeast Asia.

After being caught, small shrimp are unloaded, rinsed and drained before being dried. Drying can be done on plastic mats on the ground in the sun, on metal beds on low stilts, or using other methods. After several days, the shrimp-salt mixture will darken and turn into a thick pulp. If the shrimp used to produce the paste were small, it is ready to be served as soon as the individual shrimp have decayed beyond recognition. If the shrimp are larger, fermentation will take longer and the pulp will be ground to provide a smoother consistency. The fermentation/grinding process is usually repeated several times until the paste fully matures. The paste is then dried and cut into bricks by the villagers to be sold. Dried shrimp paste does not require refrigeration

Heh. It smells so bad but tastes alright.

I recently watched Bizarre Foods or something like that on Travel Channel... only watched it cause they were in Vietnam (I'm full Viet) and they were at a fish sauce factory. The creation process is nasty, but it tastes good on lots of things.

I ended up cutting them into strips, marinating in some EVOO, Garlic Salt, Pepper, Oregano, Lime, and some curry paste
Tomorrow I'm going to cook it up in about 1/2 cup Chicken Broth and about 1/2 cup Mango Chutney
