    Being the holiday season is upon us I thought Id start this thread so everyone can share a fovorite recipe..
    Mashed Potato Casserole
    (serves about 10, or so..)
    6 lbs of potatoes
    4-6 cloves of garlic', peeled of course
    8 ounces of cream cheese
    1 cup sour cream
    1/4-1/2 cup butter. (depending on your guilt)
    salt, and pepper, to taste (everyones different)
    Peel and boil potatoes with the garlic until tender; drain and mash till you get all the lumps out. Stir in sour cream, butter, and cream cheese until smooth.
    Add salt and pepper to taste (i use a couple of pinches of each). Place in a 9x13
    casserole dish. Cover with foil and refrigerate untill the next day.
    Bake uncovered @350. deg. for about an hour or untill heated all the way through.
    These taters are killer folks. Enjoy!!!

    Garlic Chicken a la Joisey

    3 medium onions, finely chopped
    6 cloves of garlic, minced
    3 tablespoons olive oil
    3 cups of ketchup
    1/2 cup brown sugar (firmly packed)
    1/3 white wine vinegar
    3 tablespoons hickory seasoning
    2 tablespoons of dijon mustard
    1 tablespoon tabasco
    Cook up onions, and garlic untill they get tender,then throw in rest of ingr., and seasonings. Bring it all to a boil, reduce the fire to simmer for about 10 minutes or so.
    Rinse 4 large chicken breasts and marinate in sauce at least 4 hours. ( I do mine over-night)
    Get your grill ready. Wrap Chicken in foil (2 peices per wrap is how I usually do it). Cook on each side 10 minutes. Remove foil and grill chicken untill done. (Depending on heat it usually takes me another 20 minutes or so..)

        sure have...been making it for years...recipe was passed down all the way from my great-great-great-great great grandfather's friend.

              That sounds good but coming from you Im not surpised but damn I gotta peel 6 freakin pounds of potatoes -

                Its worth ity believe me. My sister makes'em with the skins on. She calls'em the Lazy Mashed Potato Casserole...

                        Ohio's Spicy Flank Steak

                        In a sealable container (I use a baking dish with a sealable top) combine:

                        1/4 vegetable oil
                        1/4 cup lime juice
                        1 tablespoon honey
                        1 tablespoon spicy mustard
                        1 tablespoon Worcestershire sauce
                        2 cloves garlic, minced
                        1 teaspoon crushed dried red pepper flakes

                        Put the flank steak (anywhere between 1 and 2 lbs.) in the container with the marinade. Make sure you flip the steak so the marinade can get on both sides. Refrigerate overnight.

                        Remove steak and cook in a lightly oiled frying pan for 5-6 minutes on each side until well browned on both sides and still pink inside. Pour marinade in a small saucepan. Bring to a boil and simmer for 5 minutes. Remove and immediately serve.

                        *My variation(s):
                        I like to cook my meat to make sure it's dead. Flank steak is pretty thick, and I didn't think it could cook well enough to my liking by following the actions above. Therefore, I cook the steak in the oven at 250 degrees for about 2 hours. I add a little water before I put it in the oven and the steak doesn't burn. I have no complaints with the way it turns out.

                        I also don't add vegetable oil to my marinade because I found it unecessary. Of course, if you cook it in the frying pan, it would be a good idea to add it.

                              Question for horsey

                              Is your recipe good by itself? Or do you have something else with it? I guess I'm asking if you use your casserole as a side dish or the main course. Just curious.
