    Chunk charcoal is ultra-excellent.

    It gets hotter than propane.

It's basically made by burning wood in a low oxygen environment. Things like tars and oils and other junk that imparts nasty flavours are burned out in this environment.

Propane burns clean, but steam is a byproduct of it's combustion, so it's not the same type of dry heat.

It's easier to control the placement of the coals and there by the placement of the heat in charcoal fires.

Charcoal makes the meat taste better than propane.

I use a propane grill because that's all I've got. I like the way charcoal doesn't make the meat taste funny, but I like the not having to worry about the flame, even heat, etc with the propane grills.

I like to wrap my meats in big bamboo leafs then smoke it over a burning rock and let it settle for 10 hours.

Not really my dad just grills it with his charcoal griller.

Agreed. I can taste the difference between food cooked over charcoal and food cooked over propane.

I prefer charcoal but it's not really an option on my second story patio deck.

                        Propane it is.
