Off the top of my head, i'm not sure.
I'm not saying this is the best one, because it's definitely not, but I was watching The Transporter a few nights ago and there are definitely some very entertaining fight scenes in that (and i love the music)

Jet Li vs. the two blond guys in Enter the Dragon
Indiana Jones vs. the Big Middle Eastern Guy with a Sword in the Raiders of the Lost Ark (swish swish swish swish swish bang!)
Jack vs. Tyler Durden in Fight Club
Spiderman vs. Doc Ock in Spiderman II
The slave gladiators versust the much better armed Roman gladiators in Gladiator.HEAR ME ROAR!

Final Fight scene in 'Best of the Best'.
Not flashy... no stunt doubles, or cords whirling people around... just two great martialartists taking part in a realistically choreographed fight.Comment

Ok, I know this doesn't count-
I know you said movies, so this is kind of cheating. But the "Cripple Fight" (Their title, not mine) between Jimmy and Timmy on South Park probably was the best fight sequence of all time. The first time I saw that I think I may have peed my pants.
